Our Story

At South Texas Stagecoach & Trading Co., we pride ourselves on bringing back the times of yore, when life was simple and kindness really mattered. When a handshake was the final word and your meals were hand made at home. No pretense, just genuine, friendly service the way it should be.

Our Owners

Lee and Carolyn Smith

 

Hospitality starts at home, at least that’s what we've always believed. We built our home and raised our family on the principles of trustworthiness and treating people with respect... and feeding people very, very well.

 

Lee has spent years working his magic on a BBQ grill. Whether it be a backyard drum grill or a semi-trailer mounted rotisserie, he cooked on them all. Carolyn is an experienced baker, known for her cookies and holiday treats. Together, we have delighted friends, family, judges, dining guests and countless others around the country.

 

We are active in our communities, with Lee volunteering with the Houston Livestock Show and Rodeo as a past committee chairman and current member of the board of directors, and take pride in our participation with education and children's charities.

Our Process

There’s no such thing as a no-smoking section when it comes to preparing our meats. No sir, we use only the finest mequite wood to give our meats that unique flavor. We refuse to cut corners, instead we stick to the  old fashioned way, and slow cook our meats to bring out a flavor that’s hard to believe and even harder to forget.

 

Each item is carefully selected, hand rubbed with our own special blend of spices, slathered with custom sauces and closely watched throughout the smoking process.

 

Sure, we could do it faster and use cheaper cuts of meat. But you would know it from the first bite. Instead, we prefer to have the lasting impression be one of surprise and delight ... and one you, your family, friends and guests will ask for again and again.
